Crockpot Cheeseburger Soup
Description
This Crockpot Cheeseburger Soup starts by browning lean ground beef with onion, then transferring it to a crockpot along with diced potato, celery, corn, garlic, cream cheese, tomatoes, beef broth, tomato sauce, and various seasonings. It cooks for 6 to 8 hours on low (or 4 hours on high) to soften the vegetables and deepen the flavors. Before serving, a mixture of milk and flour is whisked in along with shredded cheddar cheese to create a thick, creamy consistency.
The soup cooks slowly to meld ingredients, with the cream cheese adding richness and the shredded cheddar providing a sharp cheese flavor. The vegetables offer body and texture. This soup works well as a filling meal and can be complemented with bread or a simple salad.
Leftovers store well refrigerated for up to four days. The recipe notes also include directions to make this soup on the stove in a Dutch oven if preferred, and suggest using sharp cheddar cheese shredded fresh from a block for the best melt and taste. Ground turkey or chicken can substitute beef.
