Description
This soup starts by layering peeled and diced Yukon gold potatoes alongside chopped sweet onion, minced garlic, diced celery, fresh parsley, thyme, mustard powder, butter, and chicken broth in a slow cooker. After seasoning with salt and pepper, the ingredients cook for several hours until tender.
Shortly before serving, a mixture of cornstarch and cream is added to thicken the soup, along with sour cream. The soup’s texture can be made creamier by partially pureeing or mashing some of the cooked potatoes. Finally, sharp cheddar cheese is stirred in until fully melted, adding depth and richness to the broth.
The soup is served warm with optional toppings such as extra sour cream, chopped chives, shredded cheddar, crumbled bacon, and green onions. It works well as a satisfying main course or cozy starter during cooler weather.
Ingredients
- 2 pounds potato peeled and diced, Yukon gold variety
- 1 onion chopped, medium sweet
- 4 cloves garlic minced
- 2 talks celery diced
- 4 tablespoons butter unsalted
- 1 tablespoon parsley chopped, fresh
- 1 teaspoon mustard powder
- 1 teaspoon thyme optional, dried or fresh
- 4 cups chicken broth or vegetable broth
- 1 cup cream
- 2 tablespoons cornstarch
- 1/2 cup sour cream
- 2 cups cheddar cheese shredded

Toppings:

Instructions
- Add diced potatoes, diced onion, minced garlic, celery, thyme, parsley, butter, mustard powder, and chicken broth to the slow cooker. Season with salt and pepper.
- Stir, then cover and cook for 6-8 hours on low or 3-4 hours on high.
- During the last 30 minutes of cooking, whisk cornstarch and cream together. Add sour cream. Stir into soup. Cook for 15-30 minutes or until thickened. Puree or mash part of the soup if you want a creamier texture. If needed, add more cream or milk.
- Stir in cheese until well melted. Taste and adjust for salt and pepper.
- Serve topped with sour cream, more cheese, and cooked crumbled bacon.
