Crockpot Cheesy Potatoes
Description
In this recipe, peeled and chopped potatoes are layered in a slow cooker with grated cheddar cheese, ranch seasoning, and cooked chopped bacon. The layering is repeated for even distribution of seasoning and flavor. Lining the Crockpot with sprayed aluminum foil facilitates cleanup and prevents sticking.
The potatoes cook slowly on low or high heat until they reach a tender consistency, absorbing the ranch seasoning and melding with melted cheese and smoky bacon. Finishing with additional cheese melted on top adds an appealing creamy layer. The textured contrast from the tender potatoes and crispy bacon enhances the eating experience.
This dish is a satisfying side for casual dinners or potlucks, pairing well with meats or vegetable mains. It's rich, flavorful, and requires minimal active cooking time due to slow cooker use.
Uniform potato size helps ensure even cooking. Frozen potatoes can be used without thawing for convenience. The recipe yields a dish with 10 Blue Plan SmartPoints per serving.
