Crockpot Chicken and Dumplings

Ingredients

Chicken and Vegetables

  • 4 chicken breast boneless skinless
  • ½ yellow onion minced
  • 2 celery diced, stalks
  • 2 whole carrot peeled and diced
  • 6 ounces green beans trimmed and chopped
  • ¼ cup unsalted butter cubed
  • 3 cups chicken broth
  • 2 teaspoons oregano fresh
  • 2 teaspoons thyme fresh
  • 2 teaspoons parsley fresh
  • salt to taste
  • black pepper to taste
  • cup flour divided

Dumplings

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt coarse
  • 2 tablespoons parsley chopped, fresh
  • 2 tablespoons unsalted butter cold, cut into cubes
  • 1/2 cup milk whole

Instructions

Chicken and Vegetables

  1. To a crockpot, add the chicken breasts, onion, carrots, and green beans. Place the cubed butter over the top of the chicken and vegetables.
  2. In a medium bowl, whisk together the chicken broth, oregano, thyme, parsley, salt and pepper to taste. Gradually add ⅓ cup flour into the broth and whisk to avoid clumps.
  3. Pour the broth over the chicken and vegetables.
  4. Set the crockpot to high and cover, cook for 3-4 hours, until the internal temperature of the chicken reaches 165 degrees Fahrenheit.
  5. Once the chicken is cooked through, remove it from the crockpot. Shred or chop the chicken depending on your preference.
  6. Whisk in the remaining ⅓ cup flour to thicken the gravy. Add the chicken back to the crockpot.

Dumplings

  1. In a large bowl, add the flour, baking powder, coarse salt, and fresh parsley.
  2. Cut in the butter until evenly distributed then stir in milk.
  3. Drop spoonfuls of the dumpling mixture on top of the chicken and vegetables in the crockpot.
  4. Cover and allow the dumplings to cook through completely, about 1-1 ½ hours.
  5. Once the dumplings are cooked through, garnish with additional fresh parsley and enjoy!
