Crockpot Chicken Noodle Soup
Description
This Crockpot Chicken Noodle Soup recipe uses boneless skinless chicken breasts cooked with onions, celery, carrots, garlic, thyme, salt, and pepper in a combination of chicken broth and water. A mixture of flour and water is stirred in to gently thicken the broth. Cooking on low for 6-8 hours or high for 3-4 hours allows flavors to meld and chicken to tenderize.
Afterwards, the chicken is shredded directly in the pot before adding frozen noodles. The noodles cook in the remaining heat for 30 minutes to 1 hour depending on temperature, absorbing flavors and softening properly.
This soup offers a hearty, soothing meal with vegetables, tender chicken, and tender noodles. It is ideal for a slower cooking approach, delivering warmth and comfort with minimal hands-on time.
Frozen chicken breasts can be used but require an additional hour on low or 30 minutes on high cooking time.Regular egg noodles can substitute frozen noodles, cooking in 30-45 minutes on low heat.
Ingredients
- 2 chicken breast boneless skinless
- 1/2 onion chopped
- 3 talks celery chopped
- 3 carrot chopped
- 1 tsp salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon thyme dried
- 1 teaspoon garlic minced
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 4 cups water
- 16 oz. noodle we used Reames but any will work, frozen
Instructions
- Place the chicken, onions, carrots, and celery in a 6 quart crock pot.
- Add in the seasonings.
- Stir together the flour and water in a medium size bowl.
- Pour this mixture into the crock pot.
- Add in the chicken broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Shred the chicken and then stir in the frozen noodles.
- Cover and cook on low for 1 hour or on high for 30 minutes until the noodles are cooked through.
- Serve warm and enjoy!
Notes
- Frozen chicken breasts can be cooked in the crockpot; increase low setting cook time by 1 hour or high setting by 30 minutes.
- When using regular egg noodles instead of frozen, add and cook them for 30-45 minutes on low heat until tender.
