Crockpot Chicken Parmesan Recipe
Description
This Crockpot Chicken Parmesan Recipe begins with chicken breasts dipped in eggs and coated in a mix of breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. The chicken is browned briefly to seal in juices and add texture. Then the browned chicken is placed in a slow cooker and covered with marinara sauce to cook low and slow, allowing the flavors to meld and the chicken to become tender.
The mozzarella cheese added at the end melts into a creamy topping. This method avoids frying or baking in an oven. The texture is moist chicken with a saucy, cheesy finish.
The dish fits well as a main course served over pasta or with a side of vegetables. The parmesan and Italian seasoning provide a familiar flavor profile commonly associated with chicken Parmesan.
For best results, do not fully cook the chicken during browning since it will finish in the slow cooker. Spray the crockpot with cooking spray beforehand to prevent sticking, and store leftovers in an airtight container up to 3 days refrigerated or freeze for up to 3 months.
Ingredients
- ½ cup breadcrumbs
- ½ cup Parmesan Cheese grated
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- pinch salt
- pinch black pepper
- 2 egg
- 4 chicken breast
- ¼ cup olive oil divided
- 24 ounces marinara sauce 1 jar
- 1½ cups mozzarella cheese or 4 slices mozzarella cheese, shredded
Instructions
- In shallow dish, combine the breadcrumbs, parmesan cheese, Italian seasoning, garlic, powder, salt, and pepper.
- In a separate shallow dish, whisk the eggs.
- Dip each chicken breast into the egg mixture. Then, dip in the breadcrumbs, coating entirely.
- Heat 2 tablespoons of olive oil in a large saucepan over medium heat.
- Once heated, place 2 chicken breasts in the pan. Cook on each side for a couple minutes, just until browned on the outside. The chicken should not be cooked through. Remove chicken from the pan.
- Add in the remaining 2 tablespoons of olive oil and repeat the previous step for remaining chicken breasts.
- Spray the slow cooker with cooking spray.
- Place the chicken breasts in the slow cooker, and pour the marinara sauce over the chicken.
- Cover and cook on HIGH for 3-4 hours, or on LOW for 4-6 hours.
- Remove the lid and sprinkle mozzarella cheese over the chicken breasts. Place the lid on again for a few minutes until the cheese has melted.
- Serve with your favorite pasta.
Notes
- Store leftovers in an airtight container for up to 3 days in the fridge or freeze for 3 months.
- Only brown the chicken briefly in the skillet to seal juices; it will finish cooking fully in the slow cooker.
- Spray the slow cooker with cooking spray before adding chicken to prevent sticking and make cleanup easier.
