Crockpot Chicken with Black beans in Cream Cheese Sauce

This Crockpot Chicken with Black Beans in Cream Cheese Sauce cooks frozen chicken breasts slowly with black beans, corn, and salsa before mixing in cream cheese to create a creamy, hearty dish. The long cooking time tenderizes the chicken and blends the flavors well.

Description

The recipe begins by placing frozen boneless chicken breasts into a crockpot along with drained black beans, corn, and a jar of salsa. Cooking on high for 4 to 5 hours allows the chicken to fully cook and absorb the flavors from the beans and salsa. Adding cream cheese at the end and letting it sit melts it into a creamy sauce that binds the ingredients.

The result is a filling and flavorful dish combining protein, vegetables, and a creamy texture. This can be shredded or cut into pieces for serving, making it versatile for burritos, tacos, or rice bowls.

The recipe notes suggest adjusting salsa heat level to taste, adding chopped onion for extra flavor, and mention that leftovers reheat well, making it suitable for meal prep or lunches. The dish stretches protein portions and benefits from the slow cooker’s convenience.
