  • 2 large chicken breast halved, boneless and skinless
  • 8 ounces cream cheese
  • 2 tablespoons Ranch dressing mix
  • 1/2 cup chicken broth
  • 1 cup cheddar cheese (shredded)

Instructions

  1. Place the chicken in the bottom of the crockpot. Then cut the cream cheese into two pieces and place each part on a piece of chicken.
  2. Sprinkle the top with ranch dressing and pour the broth in the pan.
  3. Sprinkle with the shredded cheese and place the lid on the crockpot.
  4. Set on high for 4 hours or low for 6.
  5. To shred the chicken, you can use 2 forks, or a hand mixer works wonderfully, just place in the pan and mix for a minute or 2.

Notes

  • For easy shredding, use a hand mixer directly in the crockpot once the chicken is cooked.
  • Serve with your favorite taco toppings or choose alternate tortillas, wraps, or lettuce leaves as desired.
