Crockpot Glazed Carrots Recipe

This Crockpot Glazed Carrots recipe slowly cooks baby carrots with brown sugar, honey, butter, and salt until tender, creating a naturally sweet and glossy glaze. Optional fresh herbs add aroma and subtle earthy notes. The slow cooker method maintains carrot texture while deeply infusing the glaze, making a convenient side dish with balanced sweet and buttery flavors.

Description

The Crockpot Glazed Carrots combine baby carrots with brown sugar, honey, butter cut into cubes, water, and salt in a slow cooker. Cooking on high for 5-6 hours or low for 6-8 hours softens the carrots evenly while the sugars and butter melt to form a sweet, shiny glaze coating each carrot. Stirring after several hours helps distribute flavors and ensures even cooking. For a thicker glaze, finishing uncovered on high for an additional 30 minutes allows excess liquid to evaporate.

The resulting carrots are fork-tender with a balance of natural sweetness from honey and brown sugar enhanced by the richness of butter. Fresh chopped herbs like thyme, rosemary, or dill added before serving can provide an aromatic contrast and freshness.

This dish serves well as a side to roasted or grilled meats and is easy to prepare ahead. The slow cooker frees time for other meal tasks while gently thickening the glaze around the carrots.

Leftover carrots store well in the refrigerator for several days and can be frozen for longer periods. Reheating can be done in a skillet or microwave to retain moisture and flavor.

Ingredients

Servings
  • 2 lbs. carrot baby
  • ¼ cup water
  • 3 Tbsp. brown sugar packed
  • 3 Tbsp. honey
  • 3 Tbsp. butter cut into 8 cubes
  • ¼ tsp. salt
  • fresh herbs optional, chopped

Instructions

  1. Combine Ingredients: Place carrots, water, brown sugar, honey, butter and salt in a 6-quart slow cooker.
  2. Cook in Crock-pot: Set slow cooker to High for 5-6 hours or Low for 6-8 hours. Stir carrots after 4-5 hours and continue cooking until carrots are fork tender. (If you want a thicker glaze, remove the lid of the slow cooker and allow to cook on high for an additional 30 minutes to allow some of the liquid to evaporate.)
  3. Serve glazed carrots with chopped thyme, rosemary or dill and enjoy!

Notes

  • Baby carrots can be peeled and chopped a day or two ahead for meal prep convenience.
  • Measure and store all ingredients in a sealed container or ziplock to add directly to the slow cooker on serving day.
  • Leftover glazed carrots keep in an airtight container refrigerated for 3-4 days or frozen for 3 to 6 months.
  • Reheat leftovers gently in a skillet or microwave to maintain texture and flavor.
