Crockpot Goulash

This Crockpot Goulash slow-cooks ground beef with onions, garlic, bell pepper, tomato paste, sauces, and seasonings to develop a hearty, tomato-rich meat sauce. Cooked pasta shells are stirred in at the end for a comforting, well-seasoned one-dish meal. The dish balances tender meat and vegetables with flavorful tomato and mushroom components.

Description

The Crockpot Goulash recipe starts with browning ground beef, onions, and garlic prior to combining with diced tomatoes, tomato paste, bell pepper, Worcestershire sauce, mushroom, and seasonings in a slow cooker. The mixture simmers to meld savory and tangy tomato notes with herbs and vegetables. Meanwhile, pasta shells are cooked separately to al dente and then mixed into the goulash near the end to absorb the sauce without becoming mushy. This method produces a thick, saucy casserole with tender beef and vegetables.

This dish suits casual family meals or meal prepping since it can be made in one pot with minimal active cooking, providing a filling, satisfying dinner option. The hearty tomato sauce with herbs and mushrooms adds depth to the comfort food character of the goulash.

For a looser texture, additional water can be stirred in before cooking to thin the sauce. This flexibility lets cooks adjust the thickness to preference.
