Chicken Mixture

  • 2 lbs. chicken cubed
  • 1/3 c. cornstarch
  • ¾ t. salt
  • ½ t. black pepper
  • ¼ c. olive oil

Sauce Mixture

  • 2/3 c. brown sugar
  • 1 c. pineapple juice
  • 1/3 c. soy sauce gluten free
  • ½ c. pineapple crushed

Instructions

  1. Combine cornstarch, salt and pepper in a gallon-size Ziploc bag. Add chicken cubes and toss until completely coated.
  2. Sear chicken in olive oil over medium heat for about 7 minutes, turning occasionally.
  3. Combine Sauce mixture ingredients in a small bowl. Mix well.
  4. Place half of the sauce mixture, then cooked chicken, and then the remaining sauce mixture ingredients in slow cooker on Lo for 4-6 hours.
  5. This meal is great served with rice or quinoa.
