Crockpot Honey Mustard Pork Chops
Description
The recipe uses boneless pork chops cooked in a slow cooker alongside a sauce of yellow mustard, honey, garlic powder, onion powder, beef broth, and black pepper. The pork cooks for several hours on high or low until tender, absorbing the sweet and tangy flavors of the sauce. Before serving, a cornstarch slurry is added to thicken the cooking liquid into a glaze-like sauce.
The mustard-sweetness combination complements the pork's natural flavor, and adjusting mustard types can modify the sauce's sharpness. This dish pairs well with sides like mashed potatoes or roasted vegetables. Cooking times may need adjustment for thicker or bone-in chops.
It's not necessary to brown the pork chops beforehand, but doing so can add extra flavor. The recipe yields servings for four to six people.
Ingredients
- 1.5 pounds pork chops boneless
- 1/2 cup yellow mustard
- 2 tablespoons honey liquid
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup beef broth
- black pepper to taste
- 1 tablespoon cornstarch plus 2 tablespoons cold water
Instructions
- Add all ingredients except for the pork chops and cornstarch to a bowl and whisk/stir them together until combined. Pour it into your Crockpot.
- Add the pork and give it a stir to ensure that the pork is mostly covered (ok if it's not all totally submerged in the sauce).
- Cook on high for 3-4 hours or on low for 6-8 hours.
- Mix the cornstarch with the cold water and add it to the Crockpot about 15 minutes or so before serving. Stir it in and then put the lid back on your slow cooker and let the sauce thicken up a bit, then serve.
Notes
- Thinner boneless pork chops cook in the suggested time; thicker or bone-in chops may need longer.
- Browning pork chops before slow cooking is optional.
- Using different types of yellow mustard or combining varieties can alter flavor.
- Recipe serves 4-6 depending on portion sizes.
