Crockpot Mashed Potatoes without Chicken Broth
Description
This recipe begins by peeling and cutting Idaho potatoes into uniform cubes placed in a cold crockpot with enough water to cover and a sprinkle of salt. Cooking on high for 3 to 4 hours slowly softens the potatoes thoroughly. Once fork-tender, the potatoes are drained and mashed in the warm crockpot with salted butter, cream cheese, and whole milk to achieve creamy mashed potatoes.
The combination of butter and cream cheese enriches the texture, adding smoothness and subtle tanginess. The slow cooking method produces tender potatoes without needing chicken broth, focusing on natural potato flavor. Seasoning with salt and black pepper finishes the dish.
To keep mashed potatoes warm before serving, switching the crockpot to the "keep warm" setting and adding a bit of butter on top prevents drying out. Stirring occasionally helps avoid scorching if kept warm for extended periods. The creamy consistency and warm temperature make these mashed potatoes well-suited for comfort-style meals.
Ingredients
- 4 pounds potato Idaho variety
- 6 tablespoons butter salted
- 8 ounces cream cheese
- 2 cups milk whole
- salt to taste
- black pepper to taste
Instructions
- Peel and rinse potatoes. Cut into even-sized cubes (1-inch x 1-inch approximately) and place them into a cold crockpot. Add cold water until potatoes are just covered and sprinkle with salt. Add lid and cook on high for 3 -4 hours or until fork-tender.
- Drain potatoes and return to warm crockpot. Mash together with butter, cream cheese, milk and seasonings. Taste and adjust seasonings. Serve immediately.
- If you'd like to keep these potatoes warm an hour or two before serving, switch to "keep warm" function and add 1-2 tablespoons of butter to the top of the mashed potatoes to keep them moist. If your crockpot runs a little hot, the bottoms of the mashed potatoes might scorch if left in too long, so just stir occasionally if you keep it warmer longer than two hours and keep an eye on them.
