Crockpot Meatloaf

This Crockpot Meatloaf combines ground beef, stuffing mix, and finely minced onion to create a soft, moist texture achieved through slow cooking. The brown sugar ketchup glaze adds a tangy and slightly sweet finish, which is broiled on top at the end for a sticky, flavorful crust. It’s a comforting main dish that benefits from hands-off cooking, making it suitable for a casual family meal.

Description

Crockpot Meatloaf uses 2 pounds of ground beef mixed with stuffing mix, milk, eggs, and minced onion, seasoned with salt and pepper. The meatloaf is shaped and slow cooked in a foil-lined crockpot on low for 6 hours, which gently cooks without drying out the meat. A brown sugar ketchup glaze is applied before and after cooking, with the final layer broiled to develop a sticky, bubbly topping that contrasts the tender interior. This method results in a moist meatloaf with a flavorful sweet-savory glaze.

The glaze combines ketchup, brown sugar, apple cider vinegar, finely minced onion, and black pepper, giving a layered flavor profile that deepens during cooking. The meatloaf can be removed with foil handles for easy transfer to a baking sheet. Broiling the glaze briefly adds caramelization and texture to the exterior. Slicing and serving with additional glaze on the side offers more taste balance.

The recipe also provides an alternative oven method for those who prefer conventional baking, spreading glaze atop the formed meatloaf and baking at 350°F for 60-70 minutes. The slow cooker technique is handy for unattended cooking while retaining juiciness.

When using the oven method, bake the meatloaf at 350°F for 60 to 70 minutes after glazing.Line the slow cooker with foil for easy removal and cleanup.Do not overmix the meat mixture to keep the texture tender.Broil the glaze briefly after slow cooking to create a sticky, bubbly crust.

Ingredients

Servings
  • 2 pounds ground beef
  • 1 large yellow onion finely minced, divided
  • 1 (6 ounce each) box stuffing mix I like to use the savory herb flavor
  • 1 cup milk whole
  • 2 large egg
  • 2 tablespoons ketchup see below, glaze
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Brown Sugar Ketchup Glaze

  • 1 ½ cups ketchup
  • ¼ cup light brown sugar
  • 2 tablespoons onion finely minced
  • 2 teaspoons apple cider vinegar
  • ½ teaspoon black pepper

Instructions

  1. In a small mixing bowl, mix all brown sugar ketchup glaze ingredients (reserving the rest of the minced onion for the meatloaf itself), stirring or whisking to combine well. Set aside.
  2. Tear off a large strip of aluminum foil (heavy duty works well), and press it into the bottom and up two of the sides of a 6 quart or larger slow cooker. Spray lightly with non-stick cooking spray, then set aside.
  3. Add ground beef, remaining minced onion (from step 1), stuffing mix, milk, eggs, 2 tablespoons glaze, salt and pepper. Use your hands to mix until just combined (being careful not to over mix).
  4. Shape into an oval-like shape and place into the foil lined crockpot. Top with ½ cup of the glaze, cover, and cook on LOW for 6 hours.
  5. When finished cooking, carefully lift out the meatloaf, using the foil overhang, and place on a baking sheet. Top with ⅔ cup of the glaze and broil until glaze is sticky and bubbly.
  6. Serve sliced, with remaining glaze sauce served on the side for drizzling.

Notes

  • When using the oven method, bake the meatloaf at 350°F for 60 to 70 minutes after glazing.
  • Line the slow cooker with foil for easy removal and cleanup.
  • Do not overmix the meat mixture to keep the texture tender.
  • Broil the glaze briefly after slow cooking to create a sticky, bubbly crust.
