Description
This meatloaf recipe starts by lightly cooking onions and garlic to soften their aroma before combining with ground beef, thyme, eggs, Worcestershire sauce, kosher salt, pepper, beef broth, and breadcrumbs to bind the mixture. Forming it into a loaf shape, it is placed in a crockpot along with seasoned potatoes and carrots.
Cooking on low in the crockpot for six hours allows the meatloaf to cook gently, resulting in a tender texture that retains moisture. Ketchup spread on top before and after cooking provides a tangy, slightly sweet glaze that caramelizes with the heat.
The vegetables absorb some of the meatloaf’s flavor while cooking, making a convenient meal in one pot. Garnishing with fresh parsley adds a touch of freshness to the final presentation.
A note for convenience is that onions and garlic can be prepared in advance or added raw if short on time, without prejudicing the overall flavor.
Ingredients
- 2 tablespoons olive oil divided use
- 1 onion finely diced
- 2 teaspoons garlic minced
- 2 1/2 pounds ground beef 90% lean
- 1 teaspoon thyme minced, fresh leaves
- 1 1/4 teaspoons kosher salt plus more to taste
- 1/2 teaspoon black pepper plus more to taste
- 1/4 cup beef broth
- 2 tablespoons Worcestershire sauce
- 2 egg
- 3/4 cup breadcrumbs
- 3/4 cup ketchup divided use
- 2 tablespoons parsley chopped, fresh
- 1 pound potato halved, small
- 1 pound carrot peeled, halved and cut into 1 inch pieces

Instructions
- Coat a 6 quart crockpot with cooking spray.
- Heat 1 tablespoon of the olive oil in a small pan over medium heat. Add the onion and cook for 4-5 minutes or until softened. Add the garlic and cook for 30 more seconds.
- Place the garlic and onion mixture in a large bowl along with the ground beef, thyme, salt, pepper, beef broth, Worcestershire sauce, eggs and breadcrumbs. Stir well to combine.
- Drizzle the remaining tablespoon of olive oil over the carrots and potatoes and toss to coat. Season with salt and pepper to taste.
- Form the beef mixture into a loaf. Place in the crockpot and arrange the potatoes and carrots around the meat.
- Brush the top of the loaf with half the ketchup. Cover the crockpot and cook for 6 hours on low.
- Brush the remaining ketchup over the cooked meatloaf. Sprinkle with parsley, then slice and serve.
Notes
- Onions and garlic can be cooked the night before or added raw directly to the ground beef mixture to save time.
