Crockpot Meatloaf

Crockpot Meatloaf combines ground beef with sautéed onions and garlic, herbs, breadcrumbs, and seasonings, slow-cooked in a crockpot alongside potatoes and carrots. The meatloaf is topped with ketchup before and after cooking to create a flavorful glaze. The slow cooking method yields a tender, moist loaf infused with savory flavors, accompanied by soft, roasted vegetables.

Description

This meatloaf recipe starts by lightly cooking onions and garlic to soften their aroma before combining with ground beef, thyme, eggs, Worcestershire sauce, kosher salt, pepper, beef broth, and breadcrumbs to bind the mixture. Forming it into a loaf shape, it is placed in a crockpot along with seasoned potatoes and carrots.

Cooking on low in the crockpot for six hours allows the meatloaf to cook gently, resulting in a tender texture that retains moisture. Ketchup spread on top before and after cooking provides a tangy, slightly sweet glaze that caramelizes with the heat.

The vegetables absorb some of the meatloaf’s flavor while cooking, making a convenient meal in one pot. Garnishing with fresh parsley adds a touch of freshness to the final presentation.

A note for convenience is that onions and garlic can be prepared in advance or added raw if short on time, without prejudicing the overall flavor.
