Crockpot Poppy Seed Chicken
Description
The Crockpot Poppy Seed Chicken recipe uses boneless, skinless chicken breasts gently cooked in a creamy sauce made from condensed cream of chicken soup, sour cream, and chicken broth. After slow cooking, the chicken is shredded and mixed with poppy seeds, which add a mild nutty flavor and visual interest. The dish is topped with a mixture of melted butter and crushed buttery crackers, then baked briefly in the oven to create a crisp, golden crust over the creamy chicken. This combination delivers a cozy texture contrast between the tender chicken and crunchy topping.
This chicken pairs nicely with neutral sides like rice or mashed potatoes, which help soak up the creamy sauce and balance the richness. It’s suitable for relaxed meals where slow cooking frees up time while delivering flavorful results.
Cooking times should be adjusted depending on whether chicken is thawed or frozen, and the browning of the cracker topping acts as a cue to remove from the oven. This recipe’s method emphasizes convenience while achieving a layered texture in the finished dish.
Ingredients
- 1.5-2 pounds chicken breast boneless, skinless
- 1 cream of chicken soup 10.5 oz can
- 8 oz sour cream
- 1/3 cup chicken broth
- 3 teaspoons poppy seeds
- 1/2 cup butter melted
- 30 crackers crushed, buttery
Instructions
- Place chicken breasts into the bowl of your crockpot. Whisk together the cream of chicken soup, sour cream, and chicken broth, then spread over the top of the chicken. Place the lid on the crockpot and cook over low heat for 5-6 hours, or high heat for 3-4 hours (mine is done at 3 hours on high using thawed chicken).
- When cooking time is complete, remove lid and shred the chicken with two forks, then mix in the poppy seeds. Combine the melted butter and crushed crackers, then sprinkle over the top of the chicken. Heat the oven to 375 degrees. Remove the the ceramic bowl of the crockpot and place in the oven for 7-10 minutes to help crisp up the cracker topping.
- Serve over rice or mashed potatoes. Enjoy!
