Crockpot Salsa Chicken is boneless, skinless chicken breasts cooked gently with mild salsa until tender but still holding shape, then topped with melted Mexican blend cheese baked until golden. The salsa keeps the chicken moist and infuses it with mild tomato and pepper flavors, creating an easy, flavorful main dish that can be served on its own or with rice and vegetables.

Description

This recipe starts by placing whole chicken breasts into a slow cooker and pouring salsa over them to impart moisture and seasoning during slow cooking. Cooking on high for 1½ to 2 hours (or low for 4 hours) is long enough to cook through while preventing the chicken from falling apart. After cooking, the chicken is transferred to a baking dish, additional salsa is spooned on top, and shredded Mexican blend cheese is evenly sprinkled over each breast.

Baking the dish at 425°F melts and browns the cheese, creating a bubbly, golden crust that adds richness and texture. The dish balances tender chicken with fresh salsa flavors and melted cheese and can be served with rice, tortillas, or a vegetable side to complete the meal.

  • 1 cup Mexican blend cheese shredded

Instructions

  1. Prepare chicken: Place whole chicken breasts in your crockpot then pour the salsa over each breast. 
  2. Cook: Cook anywhere from 1½ to 2 hours on high or 4 hours on low, you don't want to cook it longer because it will start falling apart.
  3. Preheat your oven to 425℉.
  4. Add Cheese: Transfer the chicken to a 9x13 inch baking dish. Spoon some of the leftover salsa over the chicken.  Sprinkle each breast with cheese, about 1/4 cup of cheese for each breast. 
  5. Bake: Place the baking dish in the oven and bake for 15 minutes or until the cheese is golden brown and is bubbling.

Notes

  • Do not use frozen chicken in the slow cooker; thaw first to ensure safe cooking.
  • Cook chicken on high for 1½ to 2 hours to avoid it falling apart, or 4 hours on low.
