Crockpot Shredded Chicken
Description
This Crockpot Shredded Chicken recipe combines chicken breasts layered with sliced onions, seasoned salt, black pepper, Italian seasoning, and fresh herbs over chicken broth in a slow cooker. Cooking on high for 2.5 to 3 hours, or on low for 5 to 6 hours, results in soft, fully cooked chicken breasts that are easy to shred with forks. Stirring some cooking juices back in after shredding maintains moisture.
The gentle heat and moist environment of the crockpot infuse the chicken with subtle seasoning while rendering the texture tender and juicy. It requires no pre-searing or additional steps, making it a convenient base for meals like tacos, sandwiches, salads, or casseroles.
Because chicken breast sizes vary, cook time may need adjustment to ensure the chicken is cooked through to 165°F for safety. Use a thermometer to confirm doneness before shredding.
Ingredients
- 4 chicken breast average 7 ounces each, boneless skinless
- ½ onion sliced ½" thick
- 1 cup chicken broth
- ½ teaspoon seasoned salt or to taste
- ¼ teaspoon black pepper or to taste
- ½ teaspoon Italian seasoning or to taste
- fresh herbs a few sprigs
Instructions
- In the bottom of crock pot, layer onion, chicken breast, seasonings and herbs. Add broth.
- Cook on high for 2 ½ - 3 hours (or on low for 5-6 hours).
- Using 2 forks, shred chicken. Stir in some of the juices/broth.
Notes
- Chicken breast sizes can vary; adjust cooking time as needed to reach 165°F internal temperature.
- Add some cooking juices back into shredded chicken to keep it moist before serving.
