Crockpot Spinach Artichoke Dip
Description
The Crockpot Spinach Artichoke Dip combines fresh spinach and artichoke hearts with a mix of shredded cheeses including pepper jack and Parmesan for depth and creaminess. Greek yogurt adds tang and body, while cream cheese provides richness once slowly melted in the crockpot. Lemon juice and garlic enhance freshness and flavor balance. Cooking in the crockpot for two hours ensures the cheeses melt thoroughly and the flavors blend evenly.
The texture is creamy and slightly chunky, thanks to the vegetables, with a gentle meltiness from the cheeses. The heat from cooking highlights the pepper jack's subtle spice and the crisp notes of fresh spinach remain noticeable. This slow-cooked dip is smooth but not overly soft, providing a satisfying mouthfeel to dip chips or bread.
This dip serves as a warm appetizer for gatherings or game-day food and pairs well with crisp dippers or toasted bread. It can also be used as a flavorful sauce spread on chicken breasts before baking or stirred into pasta for an easy sauce alternative.
Using fresh spinach keeps the flavor bright, but frozen spinach works if thoroughly thawed and drained. Optional additions like diced onion, red pepper flakes, or cayenne pepper can introduce more complexity and heat. Pressing artichoke hearts to remove moisture helps prevent the dip from becoming watery.
Ingredients
- 10 ounces spinach fresh
- 14 ounces artichoke hearts
- 1 cup pepper jack cheese shredded
- 1/2 cup Parmesan Cheese shredded
- lemon juice of 1/2 lemon
- 2 cloves garlic minced
- 1 cup Greek yogurt
- 1 teaspoon salt
- 1 teaspoon black pepper
- 8 ounces cream cheese room temperature
Instructions
- Roughly chop the fresh spinach. Drained the artichokes and press with a paper towel to remove excess water. Place all the ingredients in the crock pot except the cream cheese. Stir together until everything is combined.
- Cut the cream cheese into cubes and place on top.
- Cook for 1 hour on high. Stir and cook for another hour. Serve with your favorite dippers.
Notes
- If using frozen spinach, ensure it is fully thawed and excess water pressed out before adding.
- Draining and pressing artichokes removes excess moisture for a thicker dip consistency.
- Additional ingredients like finely diced onion, red pepper flakes, or cayenne can be added for more flavor and heat if desired.
- This dip works well as a spread on chicken breasts or as a pasta sauce alternative beyond dipping.
