Ingredients
- 20 ounces split peas green or yellow, *see note, dried
- 5 cups chicken broth
- 2 cups water *see note
- 1 ham bone or 2 cups leftover ham, meaty
- 3 ribs celery diced
- 2 large carrot diced
- 1 large onion diced
- 2 cloves garlic minced
- 1 bay leaf
- ½ teaspoon black pepper
- ½ teaspoon thyme dried leaves
- 1 tablespoon parsley chopped, fresh
Instructions
- Rinse peas and drain well.
- Combine all ingredients except parsley in a 6qt slow cooker.
- Cover and cook on high for 4-5 hours* or on low 8 hours.
- Discard bay leaf. Stir in parsley and season with salt and pepper to taste.
Notes
- Soak split peas overnight if cooking on high in the crockpot for 4 hours to reduce cooking time.
- Check the packaging of your peas; if they come in a 16 oz package instead of 20 oz, reduce added water accordingly.
- Adjust liquid amounts to achieve desired soup thickness; cook with lid off to thicken.
- No soaking needed for slow cooking over 4 hours at low temperature.
- Keep the ham bone during cooking to extract maximum flavor; remove before serving.
