  • 20 ounces split peas green or yellow, *see note, dried
  • 5 cups chicken broth
  • 2 cups water *see note
  • 1 ham bone or 2 cups leftover ham, meaty
  • 3 ribs celery diced
  • 2 large carrot diced
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 bay leaf
  • ½ teaspoon black pepper
  • ½ teaspoon thyme dried leaves
  • 1 tablespoon parsley chopped, fresh

Instructions

  1. Rinse peas and drain well.
  2. Combine all ingredients except parsley in a 6qt slow cooker.
  3. Cover and cook on high for 4-5 hours* or on low 8 hours.
  4. Discard bay leaf. Stir in parsley and season with salt and pepper to taste.

Notes

  • Soak split peas overnight if cooking on high in the crockpot for 4 hours to reduce cooking time.
  • Check the packaging of your peas; if they come in a 16 oz package instead of 20 oz, reduce added water accordingly.
  • Adjust liquid amounts to achieve desired soup thickness; cook with lid off to thicken.
  • No soaking needed for slow cooking over 4 hours at low temperature.
  • Keep the ham bone during cooking to extract maximum flavor; remove before serving.
