Crockpot Sweet Potato Casserole

This casserole uses peeled and cubed sweet potatoes slow-cooked with a blend of brown sugar, melted butter, vanilla extract, cinnamon, pumpkin pie spice, and a touch of salt. After cooking, the potatoes are mashed smooth and topped with a mixture of brown sugar, butter, and toasted pecans that melts into a sweet, nutty crust. The slow cooker method allows the sweet potatoes to become tender and flavorful without constant attention.

Description

The Crockpot Sweet Potato Casserole featured here combines sweet potatoes with warm spices and a vanilla-scented brown sugar mixture that permeates the potatoes during slow cooking. The potatoes are cooked until tender, then mashed smooth to create a creamy base. The topping, made of brown sugar, melted butter, and toasted pecans, is added at the end and briefly cooked to create a slightly caramelized, nutty layer. This method avoids baking in an oven and frees your time while producing a richly flavored dish. The spices, including cinnamon and pumpkin pie spice, provide a classic sweet potato casserole flavor. The melting butter ensures the topping is moist and cohesive. This dish is suitable as a comforting side for holiday meals or any occasion where a sweet touch is desired.
