Crockpot Swiss Steak
Description
Crockpot Swiss Steak involves coating round steak in flour seasoned with salt and pepper, then browning it in olive oil to develop flavor and texture. The browned steaks and a mixture of beef broth, diced tomatoes, Worcestershire sauce, garlic, onion, and green bell pepper go into a slow cooker. The low and slow process, typically 6-8 hours on low, tenderizes the meat thoroughly while melding the flavors of the tomato and vegetables. This results in a hearty, tomato-forward sauce surrounding tender slices of beef. The chunky vegetables soften yet retain a bit of bite, complementing the meat's texture. Served over mashed potatoes, it becomes a filling main dish ideal for a slow cooker meal day.
The tomato base and Worcestershire provide a savory and slightly tangy sauce, while the flour coating helps thicken it during cooking. The slow cooking also infuses the garlic and pepper into the overall flavor. This recipe is straightforward and benefits from the set-it-and-forget-it slow cooker method.
This dish is typically served as a comforting dinner by spooning the tender steak and sauce over mashed potatoes, which absorb the juices.
