Crockpot Swiss Steaks

Crockpot Swiss Steaks feature tenderized round or cube steaks simmered slowly with sliced vegetables and a savory tomato-based sauce enhanced with white wine and Worcestershire sauce. The flour-dredged steaks create a slight thickening in the rich broth as they cook, resulting in a hearty, comforting meal. Slow cooking makes the meat fork-tender and melds the flavors over several hours.

Description

This recipe uses pounded round steaks coated in flour and browned for flavor, then slow cooked atop a base of carrots, celery, onion, and garlic. The cooking liquid includes white wine, beef broth, canned diced tomatoes, tomato paste, Worcestershire sauce, and dried thyme, creating a complex, hearty sauce. The flour dredge helps thicken the sauce as it simmers gently.

The slow cooker method is hands-off and delivers meat tender enough to cut easily with a fork, infused with the savory vegetables and tomato flavor. This dish pairs well with mashed potatoes or noodles to cradle the flavorful sauce and provide a soft contrast to the meat.

For smoother sauce texture, crushed tomatoes or tomato soup can be used in place of diced tomatoes. If a thicker sauce is desired after cooking, a cornstarch slurry added during a brief simmer on the stove will improve the consistency.

Ingredients

Servings
  • 1 ½ pounds round steak or cube steaks or minute steaks
  • 2 carrot sliced into 1-inch pieces
  • 1 rib celery sliced into 1-inch pieces
  • ½ yellow onion sliced ½-inch
  • 2 cloves garlic sliced
  • ¼ cup all-purpose flour
  • 1 tablespoon olive oil
  • ½ cup white wine
  • 1 cup beef broth
  • 1 (14.5 ounce each) can diced tomatoes with juices
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon thyme dried leaves
  • salt to taste
  • black pepper to taste
  • cornstarch optional, for thickening

Instructions

  1. Add sliced carrots, celery, onion, & garlic to the bottom of a slow cooker.
  2. Pound steaks with a meat tenderizer to ¼ inch thickness and season with salt and pepper (cube steaks do not need to be pounded). Put flour in a shallow dish or plate and dredge each steak in the flour mixture.
  3. Heat oil in a skillet over medium-high heat and brown steaks on both sides, about 2 minutes per side adding more oil if needed.
  4. In the same pan, add wine and scrape up any brown bits. Add to the slow cooker with remaining ingredients except for the cornstarch.
  5. Cover and cook for 6-8 hours on low or 4-5 hours on high or until steaks are fork tender.
  6. Serve over mashed potatoes or noodles.

Notes

  • Replace diced tomatoes with crushed tomatoes or tomato soup to create a smoother sauce texture if preferred.
  • To thicken the sauce after cooking, mix 1 tablespoon cornstarch with 1 tablespoon water and stir into a simmering sauce gradually until desired thickness is reached.
