Crockpot Tortellini Soup
Description
This soup begins by browning ground Italian sausage with olive oil to develop rich flavor and remove excess fat. The cooked sausage is added to the crockpot along with chopped red onion, garlic, carrot, celery, drained diced tomatoes, chicken stock, heavy cream, Italian seasoning, salt, pepper, and Parmesan cheese for depth. Cornstarch mixed with water is stirred in to slightly thicken the broth. The soup cooks on low heat for 3 to 4 hours, allowing flavors to meld. Just before serving, fresh spinach and cheese tortellini are added and cooked for 7 to 8 minutes until the spinach wilts and tortellini is tender. The result is a creamy, flavorful soup with a balance of meatiness, herbaceous notes, and tender pasta and greens.
This soup is suitable for a filling lunch or dinner. It can be served alone or with crusty bread to soak up the creamy broth.
Ingredients
- 1 tablespoon extra virgin olive oil
- 1 ½ pounds Italian sausage ground
- 1 red onion chopped (approximately 1½ cups
- 3 garlic clove minced (approximately 1½ teaspoons
- 1 large carrot diced (approximately 1 cup
- 1 cup celery diced
- 1 can diced tomatoes drained
- 4 cups chicken stock
- 2 cups heavy cream
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup Parmesan Cheese shredded
- 3 tablespoons cornstarch
- 3 tablespoons water
- 5 ounces fresh spinach, chopped
- 1 package cheese tortellini 20 ounces
Instructions
- In a large skillet, over medium heat, add oil.
- Once hot, add ground sausage and cook until browned, breaking it up in the pan as you go (about 5 minutes). Drain grease.
- Add the sausage to the crockpot and top with onion, garlic, carrots, celery, tomatoes, chicken stock, heavy cream, Italian seasoning, salt, pepper, and parmesan cheese.
- In a small bowl, mix together cornstarch and water. Mix into the soup. Cook 3-4 hours on low.
- When ready, add the spinach and the tortellini and cook for 7-8 minutes, or until cooked through and the spinach is wilted. Serve immediately.
