Description

Crockpot Tortellini Soup with Sausage features Italian sausage sautéed with onions and garlic, combined in a slow cooker with carrots, celery, crushed and diced tomatoes, and chicken broth. The soup simmers slowly to develop depth of flavor from the sausage and vegetables. Cheese tortellini and baby spinach are stirred in toward the final half hour of cooking, with optional heavy cream added for a creamy texture. This method allows the pasta to cook through without becoming mushy. The soup is seasoned with salt and pepper to taste and served hot, providing a satisfying one-pot meal that includes protein, vegetables, and pasta.

The balance of ingredients highlights the savory sausage and fresh spinach in a tomato broth enriched slightly by cream. Chopping carrots finely shortens cooking time when cooking on high heat.   • 16 ounces Italian sausage see note
  • 1/2 medium onion chopped
  • 4 cloves garlic minced
  • 2 medium carrot sliced or chopped
  • 2 ticks celery chopped finely
  • 1 (28 ounce) crushed tomatoes canned
  • 1 (14 ounce) diced tomatoes with juices, canned
  • 4 cups chicken broth
  • 2 (9 ounce) cheese tortellini refrigerated, packages
  • 3/4 cup heavy cream optional, aka whipping cream
  • 2 cups baby spinach packed, fresh
  • salt to taste
  • black pepper to taste

Instructions

  1. Add the sausage meat and onions to a skillet. Sauté for about 7-8 minutes, breaking the sausage meat up with your spoon, until browned. If needed, spoon out some of the excess fat.
  2. Stir in the garlic and cook for about 30 seconds. Add the sausage mixture to your Crockpot.
  3. Add the carrots, celery, canned tomatoes, and chicken broth to the Crockpot. Keep in mind that if you want the soup to cook in 3-4 hours, the carrots will have to be chopped pretty finely. If you're cooking it for 7-8 on low or 4-5 hours on high, you can chop them larger.
  4. About 30 minutes prior to serving, add in your cheese tortellini, cream, and spinach (I set the heat to "high"). Give it a stir occasionally. Season with salt & pepper as needed prior to serving. 

Notes

  • Ground sausage or sausage meat removed from casings can both be used; spicy sausage adds extra flavor.
  • Leftover soup thickens as the tortellini absorbs broth; add more chicken broth when reheating.
  • To reheat leftovers with tortellini, consider adding fresh tortellini during warming to maintain texture.
  • For thicker soups cooked less time, chop carrots finely to ensure tenderness.
  • The recipe fits well in a 7-quart Crockpot to accommodate ingredients and allow stirring.
