Description
Begin by slicing onions thickly and placing them in the bottom of the crock pot to create a flavorful base and prevent sticking. Place the whole chicken breast side up and brush it with olive oil. A seasoning mix of paprika, Italian seasoning, garlic powder, salt, and black pepper is applied evenly over the chicken skin.
The chicken is cooked on low for 4-6 hours or high for 2-3 hours until it reaches an internal temperature of 165°F, ensuring it is safely cooked and juicy. After cooking, letting the chicken rest allows juices to redistribute for more tender meat. For those preferring crispy skin, broiling the cooked chicken for 4-5 minutes helps develop a browned, crisp exterior without drying.

Ingredients
- 1 chicken 4-6 lbs, whole
- 2 onion
- 2 tbsp olive oil
- 1/2 tsp paprika
- 1 tsp Italian seasoning
- 1/4 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Peel and slice the onions into large thick slices. Place them at the bottom of a crock pot.
- Place the chicken in the crock pot (breast side up). Use a basting brush to rub the olive oil all over the skin of the chicken.
- Mix all the seasonings together in a small bowl.
