Croissant Morning Buns

Adapted from Tartine. This recipe is time consuming and requires a lot of resting and chilling, but it's really not bad if you spread the tasks out over 2-3 days. Plan accordingly.  Trust me, it's worth it.

Ingredients

Servings

Preferment

  • 6 tablespoons milk
  • 1 ½ teaspoons active dry yeast or instant yeast
  • cup all-purpose flour

Dough

  • 2 teaspoons active dry yeast or instant yeast
  • ¾ cup milk 2 tablespoons quantity indicated
  • 3 cups all-purpose flour
  • 3 tablespoons sugar
  • 2 teaspoons kosher salt
  • ½ tablespoon butter melted and cooled, unsalted
  • 22 tablespoons butter cool but pliable, unsalted, 2 ¾ sticks

Filling and Assembly

  • cup granulated sugar
 plus more for the pan and dusting finished buns
  • cup light brown sugar
  • 2 teaspoons orange zest optional
  • 1 ½ tablespoons cinnamon
  • ¼ teaspoon kosher salt
  • 4 tablespoons butter melted and cooled, unsalted
