  • 4 croissants sliced in half lengthwise
  • 16 ounces turkey see note 1, deli style
  • 8 lices Bacon see note 2, cooked
  • 4 large lettuce leaves
  • 1 large tomato sliced, vine-ripened
  • 2 avocado halved, pitted, and sliced
  • salt freshly ground
  • black pepper freshly ground
  • ¼ cup mayonnaise

Instructions

  1. Working with one sandwich at a time, or assembling all four simultaneously, arrange 4 ounces turkey meat on the bottom half of a croissant. Top each with 2 slices of bacon, a lettuce leaf, tomato slices, and avocado slices. 
  2. Season the tomato and avocado slices to taste with salt and pepper. Spread 1 tablespoon of mayonnaise on the top half of each croissant and place on top of the sandwich.

Notes

  • If preferred, leftover roasted turkey can substitute deli-style turkey for the sandwich filling.
  • For cooking bacon evenly and with less mess, bake it on a rack in the oven at 400°F for 10 to 15 minutes until crisp.
  • This recipe yields four croissant sandwiches, suitable for a small group meal.
  • Store any leftover sandwiches in the refrigerator, covered, for up to two days to keep them fresh.
