Crumb Cake
Description
Crumb Cake is prepared using a boxed yellow cake mix as the base layer, which is lightly baked until just set. The crumb topping combines butter, flour, cinnamon, brown sugar, and vanilla, mixed to a coarse, sandy texture that provides a crisp and flavorful cover. After topping the partially baked cake with this crumb mixture, it returns to the oven for further baking to achieve a golden, crunchy topping.
The lightly baked cake underneath supports the crumb so it stays distinct rather than sinking in, creating a textural contrast between soft cake and crunchy topping. The cinnamon and brown sugar in the topping enhance the sweetness and spice profile typical for crumb cake.
This cake is served cut into squares and works well for breakfast or dessert with coffee or milk. It can be sliced while warm or cooled.
Notes recommend not overmixing the batter for a soft crumb, using an electric mixer to incorporate butter fully for the topping, and monitoring bake time carefully to avoid overbaking. The initial bake sets the cake enough to hold the topping without it sinking.
Ingredients
- 1 yellow cake mix box plus cake mix ingredients
- 1 c. butter
- 2 1/4 c. flour
- 1 1/2 Tbsp cinnamon
- 1 3/4 c. brown sugar
- 1 1/2 Tbsp vanilla
Instructions
- Preheat your oven to 350 degrees.
- Prepare your cake mix according to the directions on the back of the box. Spray a 9x13 baking dish with non-stick spray. Pour cake mix batter into pan.
- Bake for 15-20 minutes until center is just barely set. Wiggle the pan and make sure it's not to jiggly!
- While the cake is baking prepare you crumb topping. Grab a big bowl and combine the butter, flour, cinnamon, sugar and vanilla with an electric mixer until it is crumbly.
- Top cake with crumb topping as soon as it is removed from the oven. Put back in oven and bake for another 10-15 minutes or until the crumb topping looks done.
Notes
- Mix the cake batter just until combined to keep the cake texture soft and tender.
- Use an electric mixer to blend the crumb topping ingredients thoroughly, aiming for a coarse, sandy texture.
- Bake the cake first until the center is barely set to ensure the topping stays on top and doesn't sink.
