Crunchy Baked Sweet Potato Chips
Description
Sweet potatoes are sliced very thinly, preferably with a mandoline for uniform thickness, and soaked briefly in cold water to reduce surface starch. After drying, the slices are tossed with olive oil and spread in a single layer on a baking sheet. The chips bake slowly at 300°F, flipped mid-way to crisp both sides.
The result is a snack with a balance of crispness and slight chewiness, carrying the natural sweetness of the potato enhanced by the salt and mild olive oil flavor. Baking instead of frying keeps the chips lighter while maintaining crunch.
Cool the chips on the baking sheet to allow them to firm up as they cool. This snack works well as a healthier alternative to fried chips with natural ingredients and simple seasoning.
