Crunchy French Toast
Description
Crunchy French Toast uses thick slices of brioche or challah bread for a soft yet sturdy base. The bread is soaked in a mixture of eggs, whole milk, vanilla extract, cinnamon, and a pinch of salt, imparting a warm, aromatic flavor. Each soaked slice is pressed into partially crushed cornflakes, which form a crisp coating when cooked. Cooking on a preheated griddle or skillet with butter produces a golden-brown exterior that provides texture contrast to the tender interior.
This method adds extra crunch while retaining the classic French toast softness inside. Serving the French toast warm alongside maple syrup, powdered sugar, and fresh berries adds sweetness and fresh fruit brightness to the dish.
To keep the French toast warm before serving, it can be placed on a wire rack in a 200°F oven for up to 30 minutes, maintaining crispness without becoming soggy. This recipe prepares a satisfying breakfast or brunch offering.
Ingredients
- 4 egg large
- 3/4 cup milk whole
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- Pinch salt
- 4 cups cornflakes
- 8 brioche bread or challah bread, thick slices
- unsalted butter for cooking
- maple syrup for serving
- powdered sugar
- Berry
Instructions
- If using an electric griddle, preheat the griddle to 350 degrees F.
- In a shallow pan or pie plate, add the eggs, milk, vanilla, cinnamon, and salt. Whisk until well combined.
- Place the cornflakes in a large bowl and crush with your hands until the pieces are small, but not completely crushed into crumbs, and somewhat uniform in size.
- Dip each side of the bread in the egg mixture. Dip the slice into the cornflakes on both sides, pressing to adhere the flakes; set aside on a baking sheet or platter. Repeat with the remaining slices.
- Melt a little butter on the hot griddle or in a large skillet over medium heat. Cook the French toast until golden brown, about 3 to 4 minutes on each side.
- Serve the French toast warm with maple syrup, powdered sugar, and berries, if desired.
Notes
- Keep cooked French toast warm by placing on a wire rack in a 200°F oven for up to 30 minutes.
- Use cornflakes crushed to uneven small pieces to maintain a crunchy texture coating.
- Brioche or challah bread thick slices work best for holding the coating and soaking the egg mixture.
- Serve with maple syrup, powdered sugar, and fresh berries for balance of sweetness and freshness.
