Crunchy Lemon Parmesan Salad
Description
This salad features romaine lettuce leaves that have been rinsed, sliced, and spun dry for optimal crunch. The dressing uses freshly squeezed lemon juice blended with olive oil, providing a bright and slightly tangy coating that pairs nicely with the savory notes of freshly grated Parmesan cheese. Black pepper and salt enhance the natural flavors without overpowering the fresh ingredients.
The texture contrasts crisp lettuce against the fine granular texture of grated cheese, with the lemon providing a clean, acidic brightness. The salad is simple to prepare and ideal as a refreshing accompaniment to main courses, balancing heavier dishes with its acidity and crunch.
For best results, serving the salad immediately after dressing is recommended to maintain the lettuce’s crispness, as the acid and oil cause wilting over time. Using romaine hearts instead of a full head provides more crunch due to the tighter leaf structure.
Ingredients
- 1 romaine lettuce or 3 romaine hearts, head
- ¼ cup olive oil
- 2 lemon juiced - or 3 small lemons, large
- 1 cup Parmesan Cheese finely grated
- salt to taste
- black pepper to taste, cracked
Instructions
- Rinse romaine and slice into quarters lengthwise and then chop into small leaves. Discard the ends. Add the lettuce to a salad spinner and spin to remove excess water.
- Add the lettuce to a large bowl with the remaining ingredients and toss until evenly combined.
Notes
- Use romaine hearts for a crunchier texture compared to a full romaine head.
- Serve the salad as soon as it is dressed to prevent wilting from the lemon juice and olive oil.
