Crustless Quiche Lorraine

This crustless quiche Lorraine blends cooked bacon and melted Gruyere cheese with a smooth custard seasoned with nutmeg and chives. Baking it in a sprayed pie dish creates a tender, sliceable quiche without the need for pastry. The result is a savory, custardy dish where the smoky bacon and nutmeg spice complement the creamy texture, ideal for breakfast or brunch.

Description

The Crustless Quiche Lorraine combines fried bacon pieces and grated Gruyere cheese as a flavorful base topped with a seasoned egg custard made from milk, half and half, eggs, salt, pepper, and a pinch of freshly grated nutmeg. Baking this mixture allows the custard to set around the cheese and bacon, creating a smooth yet firm texture without a pastry crust, making it lighter and easier to prepare. Chopped chives added on top bring a mild onion note and a fresh color contrast.

This quiche slices neatly into six portions, making it suitable for serving at breakfast, brunch, or a light dinner. It can be paired simply with a green salad or fresh fruit for balance. The smoky bacon and nutmeg give the dish subtle warmth that complements the creamy Gruyere and custard base.
