Cuban Mojo Marinade Recipe (Mojo Sauce)
Description
The Mojo Sauce recipe begins by finely chopping or grinding garlic, onion, oregano, cumin, salt, and pepper into a smooth paste, either using a food processor or traditional mortar and pestle. Separately, sour orange juice or a mixture of orange and lime juice is whisked with olive oil until slightly thickened. This citrus and oil blend is then stirred into the garlic paste, rounding out the marinade with acidity and richness. The resulting sauce combines bold garlic flavor with herbaceous and citrus notes.
Typically used as a marinade, this sauce imparts bright, savory flavors to grilled meats or seafood. Its balance of fresh acids and aromatics cuts through rich proteins and enhances their natural taste. It can also be spooned over cooked dishes as a sauce or dip.
Ingredients
- 10 cloves garlic chopped
- 1 small onion chopped
- 1 teaspoon oregano (dried can be used)
- 1/2 teaspoon cumin
- 1/2 teaspoon salt (or to taste)
- black pepper to taste
- 1/2 cup orange juice or use equal parts orange and lime juice, sour
- 1/3 cup olive oil
Instructions
- Add the garlic, onion, oregano, cumin, salt and pepper to a food processor and process to form a paste. Alternatively, you can use a mortar and pestle (or molcajete) to grind by hand.
- In a small mixing bowl, whisk together the sour orange juice and olive oil until it thickens.
- Stir in the seasoned garlic paste until well combined.
- Adjust with salt and pepper and use as needed.
