Description
This recipe uses a 6-inch tortilla heated gently in a non-stick skillet. One half is layered with slow cooker pernil (pork), Swiss cheese, slices of lean ham, dill pickles, and a smear of mustard before folding. Cooking on low heat allows the cheese to melt evenly and the tortilla to crisp without burning.

Ingredients
- 1 oz pernil slow cooker
- 1 lice swiss cheese I used Sargento, reduced-fat
- 1 oz ham I uses Hillshire Farm 97% fat free, lean
- 1 lice dill pickle
- 1 teaspoon mustard
- 6- inch tortilla 8-inch, low-carb, whole wheat or gluten-free
Instructions
- Heat a non-stick skillet over low heat.
- Spray with oil and place tortilla on the pan.
- On half of the tortilla, place a piece of cheese, pork, ham, pickle and mustard.
- When cheese is melted, fold the quesadilla in half and flip to heat other side.
- Remove from heat and cut into 3 pieces.
