Description

This recipe starts by mixing flour with garlic powder, onion powder, salt, and black pepper, then dredging cube steaks in the seasoned flour. The steaks are pan-fried in oil until browned on both sides and set aside. In the same pan, butter, sliced white onion, and mushrooms are sautéed until softened.

Dry gravy mix is added and stirred to form a paste, scraping any flavorful browned bits from the pan bottom. Beef broth is then whisked in to form a smooth gravy. The steaks return to the pan to warm through in the sauce, which thickens and coats the meat for a rich, savory finish. Additional seasoning can be adjusted to taste.

This dish pairs well with classic sides like mashed potatoes or steamed vegetables and delivers a hearty, home-style meal.

If using salted butter, omit additional salt from seasoning to balance flavors. Dry gravy mix can be homemade or store-bought.

For the cube steaks:

  • 5 cube steak about 1 1/2 pounds
  • 1/2 cup flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt fine sea salt
  • 1/2 teaspoon black pepper ground
  • 2 tablespoons canola oil or vegetable oil

For the gravy:

  • 2 tablespoons butter unsalted
  • 1/2 white onion , thinly sliced
  • 2 cups white mushrooms , sliced
  • 2 tablespoons dry gravy mix
  • 1 1/2 cups beef broth low sodium
  • salt fine sea
  • ground black pepper fine sea

Instructions

  1. In a shallow dish or pie plate, combine the flour, garlic powder, onion powder, fine sea salt and black pepper.
  2. Dredge the cube steaks in the flour mixture, gently shaking off excess.
  3. In a large skillet, preferably cast iron, heat over medium-high heat. When hot, add the oil for 1 minute.
  4. Add the cube steaks to the skillet. If working with a smaller skillet, you might have to work in batches. Do not crowd the steak.
  5. Cook for 2-3 minutes on each side or until browned. Remove to a plate and set aside.
  6. In the same skillet, add the butter, white onion and sliced mushrooms. Saute until starting to soften, about 3-4 minutes.
  7. Using a whisk, add the dry gravy mix, making somewhat of a paste and scraping the dried bits off the bottom of the pan.
  8. Stir in the beef broth until smooth. Taste test and add additional salt or pepper, if needed.
  9. Add the cube steaks back to the skillet, spooning sauce over the top. Cook for another 1-2 minutes so they can reheat and sauce can thicken. Serve immediately over rice, buttered noodles or mashed potatoes.

  • You can substitute the dry gravy mix with a homemade blend or use a commercial brown gravy packet matching about 2 tablespoons.
