Cucumber and Avocado Sandwich
Description
This sandwich layers herbed goat cheese spread onto whole grain bread slices, topped with romaine lettuce leaves, thin cucumber slices, creamy avocado, and crunchy alfalfa sprouts. A squeeze of fresh lemon juice over the cucumber and avocado adds a subtle tang and prevents browning. Seasoned with salt and black pepper to taste, the sandwich is then closed with another slice of bread, goat cheese side down, to encase the filling.
The combination of creamy goat cheese and avocado with the crispness of cucumber and lettuce delivers a contrast in textures and a mild, fresh flavor suitable for a light meal. The use of herbed goat cheese adds dimension without overpowering the delicate vegetables.
Since the sandwich uses fresh ingredients, it is best eaten the day it is made to maintain the textures and flavors at their peak. If herbed goat cheese is unavailable, plain goat cheese can be used with added herbs to mimic the flavor.
Ingredients
- 4 lices bread 21 Whole Grains and Seeds, brand Dave's Killer Bread
- 4 ounces goat cheese at room temperature, herbed
- 2 romaine lettuce washed and dried, leaves
- 1/2 of a large cucumber peeled and sliced
- 1 avocado peeled, pitted, and sliced, large
- lemon juice fresh, squeeze of
- ½ cup alfalfa sprouts
- salt to taste
- black pepper to taste
Instructions
- Spread the herbed goat cheese evenly on all of the slices of bread. Take one of the slices and top with lettuce, cucumber slices, and avocado slices. Drizzle a little fresh lemon juice over the cucumbers and avocados. Add some sprouts and season with salt and black pepper, to taste.
- Place a piece of bread, goat cheese side down, on top to sandwich all of the fillings together. Repeat with second sandwich. Serve immediately.
- Note-if you can't find herbed goat cheese, you can add herbs to plain goat cheese or just use plain goat cheese. This sandwich is best the day it is made.
