  • 1 English cucumber diced
  • 1 clove garlic minced
  • 3 tablespoons basil chopped, fresh
  • 1 tablespoon olive oil
  • 2 teaspoons red wine vinegar
  • salt to taste
  • black pepper to taste

For Serving

  • 1 baguette
  • olive oil
  • 1 clove garlic

Instructions

  1. Add all topping ingredients in a bowl and gently toss to combine.
  2. Slice baguette into ¾" slices and brush the top of each slice with olive oil.
  3. Broil 2-3 minutes or until lightly toasted.  Remove from the oven and rub each slice of bread with the fresh clove of garlic.
  4. Spoon the cucumber mixture over the bread to serve.
