This simple, fresh, and healthy salsa is great with tortilla chips or served over grilled chicken or fish.

Ingredients
- 1 cup cucumber diced, seedless
- 1 cup Mango diced
- 1/4 cup red onion diced
- 1 jalapeño seeds removed and diced, small
- 1/4 cup cilantro chopped
- lime juice of 1
- salt to taste
- black pepper to taste
- tortilla chips for serving, optional
Instructions
- 1. Combine cucumber, mango, red onion, jalapeno, cilantro, and lime juice in a medium bowl. Season with salt and black pepper, to taste. Stir and serve with tortilla chips, if desired. This salsa is also great with grilled fish or chicken.
