Ingredients

Servings

Cucumber Juice

  • 2 cucumber peeled

Cucumber Margarita (makes 1)

  • 2 oz. cucumber juice
  • 1 ½ oz. tequila silver
  • 1 ½ oz. lime juice freshly squeezed
  • 1 oz. Cointreau or triple sec
  • ½ oz. simple syrup optional
  • lime for garnish, wedges or twists
  • cucumber for garnish, sliced into rounds

Instructions

  1. Make the cucumber juice
  2. Peel the cucumbers, and chop roughly.
  3. Place in the blender, and blend for 45-60 seconds, or until the cucumbers have turned into juice.
  4. Strain with a fine mesh strainer, and store in a sealed mason jar in the fridge until it’s cucumber time.
  5. Mix the margarita(s)
  6. Run a lime along the rim of your glass(es), and coat with salt or Tajin.
  7. Add ice, and set aside.
  8. In a cocktail shaker, measure out the cucumber juice, silver tequila, lime juice, Cointreau and simple syrup.
  9. Add ice and shake until ice cold.
  10. Strain and pour into the prepared glass. Enjoy immediately.

Notes

  • The cucumber juice should make around 1-2 cups, depending on the water content of your cucumbers. Regular cucumbers will have more water than an English cucumber.
  • This recipe makes one margarita, but it can easily be doubled or tripled if you’re pouring margaritas for a crowd.
  • How can I use margarita mix in this recipe? If you’ve got margarita mix (homemade margarita mix or the store-bought kind), omit the lime juice and simple syrup with 2 ½ oz. of the margarita mix.
  • My favorite margarita store-bought shortcuts:
  • Cold press freshly squeezed lime juice: It sounds silly, but if you can find this refrigerated lime juice that’s good to go, it’s worth the cost, especially if you’re entertaining.
  • Simple syrup: If you’re unsure if you’ll have time to make and then cool simple syrup, they sell this bottled stuff in stores, too!
