Cucumber Mint Margarita
Description
This Cucumber Mint Margarita combines fresh cucumbers, mint syrup, tequila, and lime juice to create a refreshing cocktail with cooling and bright notes. The preparation involves rimming glasses with margarita salt and filling them with crushed ice. Cucumber slices are added to the shaker to impart their subtle flavor as it's shaken with tequila, lime juice, and homemade mint syrup made from simmering sugar, water, and mint leaves. Straining the mixture over the ice gives the drink a frothy top.
The drink balances tart lime, herbal mint, and the heat and depth of tequila, making it a rejuvenating sipper. The crushed ice keeps the margarita chilled and slightly diluted over time, maintaining its refreshing quality. Garnished with cucumber and mint sprigs, it presents attractively in salt-rimmed glasses.
It serves well as a light cocktail for warm days or as a complement to spicy or fresh dishes. Making the mint syrup ahead allows quick assembly when desired.
Ingredients
- Margarita salt for the rim
- lime wedges
- ice crushed
- 4 ounces tequila (I prefer blanco here)
- 2 ounces lime juice fresh
- 1 ounce mint syrup recipe below, simple syrup
- 1 cucumber slices, handful
mint simple syrup
- 1/3 cup granulated sugar
- 1/3 cup water
- 1 mint bunch, leaves
Instructions
- Rim two glasses with a lime wedge and dip in margarita salt to coat. Fill the glasses with crushed ice.
- Fill a cocktail shaker with ice. Add in the tequila, lime juice and simple syrup. Add in a few slices of cucumber - this is imperative because as you shake, the cucumber flavor will infuse the drink. Cover and shake for 30 seconds until frothy. Pour the mixture over the crushed ice between the glasses, garnishing with cucumber slices. Top with a sprig of fresh mint and enjoy!
mint simple syrup
- Combine sugar, mint and water together in a small saucepan and heat over medium heat until simmering, stirring continuously. Reduce heat to low and cook until the sugar is dissolved. Set aside to cool completely. Remove the mint before using. You can do this ahead of time and store it in the fridge.
