Description
This Cucumber Salad features very thinly sliced English cucumbers and large red onion, tossed in a dressing of white wine vinegar, honey for mild sweetness, and sea salt to enhance flavor. Freshly chopped dill adds a bright, aromatic herbal note, while black pepper provides subtle heat. Optional chopped fresh chives can be added as a garnish for extra flavor and color.
After tossing, the salad is chilled for 20 minutes allowing the flavors to meld and the cucumber and onion to slightly soften while retaining crispness. Excess water from the cucumber is drained before serving to maintain texture and prevent dilution of flavor.

Ingredients
- 2 cucumber very thinly sliced, English
- ½ red onion very thinly sliced, large
- ¼ cup white wine vinegar
- 1 tablespoon honey or agave nectar
- 1 teaspoon salt sea salt
- 2 tablespoons dill chopped, fresh
- chives optional, for garnish, chopped fresh
- black pepper freshly ground
Instructions
- In a large bowl, toss together the cucumber, onion, vinegar, honey, and salt. Chill for 20 minutes.
- Transfer to a serving bowl, leaving any excess water behind. Sprinkle with the dill and chives, if desired. Season with several grinds of pepper and serve.
