Cucumber Salad with Herb & Garlic Dressing (Vinaigrette)
Description
This salad uses thin slices of either standard or long English cucumbers combined with finely diced red onion, providing a crisp and slightly pungent base. The herb and garlic vinaigrette is prepared by shaking together red wine vinegar, extra virgin olive oil, minced garlic, Dijon mustard, and a blend of mixed dried herbs.
A small amount of sugar and seasonings including salt and black pepper balance acidity and enhance the flavor complexity. The dressing does not cling heavily to the cucumber, resulting in some pooling of dressing at the bowl bottom, meaning the salad retains a fresh and light quality.
Ready to serve immediately, this salad offers a fresh, crunchy texture alongside a bright, herbaceous, and mildly sharp dressing. It is ideal as a quick side dish or refreshing contrast to richer main courses.
Substitutions for red wine vinegar include other wine or cider vinegars, adjusting quantities as necessary for balance. The blend of mixed herbs can be replaced with a measured mix of basil, parsley, oregano, and thyme to suit taste and availability.

- Approximately one-third of the dressing typically remains in the bowl as it does not adhere strongly to cucumbers.
