This cucumber tequila soda is wildly refreshing and perfect for summer! Cucumber syrup, fresh lime, mint, tequila and super bubbly soda water make for the most delish, crisp and light drink.

Ingredients
cucumber syrup
- 4 cucumber cut into pieces, mini
- ½ cup water
- ¾ cup sugar
tequila soda
- 2 ounces cucumber syrup
- ½ ounce lime juice fresh
- 1 ½ ounces tequila
- soda water for topping off, bubbly
Instructions
- Place the cucumbers and ¼ cup of water in a blender. Puree until smooth and no chunks remaining. Pour the mixture into a saucepan and add the sugar and remaining water. Bring the mixture to a light simmer, whisking so the sugar dissolves. Turn off the heat.
- Strain the mixture through a fine mesh strained at least once, maybe twice, to remove any extra bits. Pour the remaining cucumber syrup into a jar and store in the fridge for a few days.
- Fill a glass with crushed ice and cucumber slices. In a cocktail shaker, shake the cucumber syrup, lime and tequila together. Shake for 30 seconds. Pour over the crushed ice. Fill to the top with bubbly water.
