Cucumber Tomato Salad

A refreshing side dish to any meal, this tomato cucumber salad is full of fresh flavors and pairs well with just about any main dish! Put it on repeat for a healthy side and mix it up with different ingredients!

Ingredients

  • 2 cups tomato chopped, fresh
  • 1 cucumber thinly sliced, large
  • ½ red onion thinly sliced, medium-sized
  • 8 ounces mozzarella cheese optional, fresh
  • 3 Tbsp olive oil to taste, or avocado oil
  • 2 Tbsp red wine vinegar
  • ½ cup basil thinly sliced, fresh leaves
  • 1 dill chopped, fresh sprig
  • ½ tsp salt to taste, sea salt
  • ¼ tsp black pepper to taste
  • 2 to 3 Tbsp Balsamic reduction optional

Instructions

  1. Add all of the ingredients to a large bowl and toss everything together until well-combined. There is no need to prepare the dressing separately from the salad, so feel free to toss every last ingredient into one bowl and mix everything up.
  2. Taste the salad for flavor and add more olive oil, vinegar, sea salt, or black pepper to taste. If you’re feeling fancy and would like to make a balsamic reduction sauce, feel free to drizzle one to two tablespoons of balsamic reduction over the salad.
  3. Serve this easy cucumber tomato salad alongside any main dish, and enjoy!
  4. Store cucumber tomato salad in an airtight container in the refrigerator for up to 3 days.
  5. Note: If you would like to store the salad for more than 1 day, I suggest mixing in the fresh chopped basil and mozzarella just before serving for the best results. This ensures the salad stays tasting as fresh as possible.

Notes

  • *Use your favorite kind of tomatoes. I used small tomatoes (like grape tomatoes or cherry tomatoes), which I sliced in half. You can use vine-ripened tomatoes, heirloom tomatoes, roma tomatoes, and more! Just be sure they are ripe and juicy.
  • **I use Ciliegine (cherry size) small mozzarella balls and I cut them in half. Fresh mozzarella can be found in the deli section of the grocery store, near all the other cheeses.
  • ***You can use lemon juice, cider vinegar, or rice vinegar here too.
