Cucumber Tomato Salad

Fresh tomatoes, cucumbers, onion, bell pepper and garlic all in a tangy and slightly sweet easy dressing. The perfect easy salad recipe for summer.

Ingredients

  • 4 tomato cut into 2-inch pieces, heirloom
  • 1 green bell pepper , seeded and cut into 2-inch peces
  • 1 cucumber seeded and cut into bite-sized pieces, medium
  • 1/2 sweet onion , cut into thin strips
  • 2 cloves garlic , minced or pressed
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon kosher salt coarse
  • 1/4 teaspoon black pepper ground

Instructions

  1. In a large bowl, toss together the tomatoes, bell pepper, cucumber, onion and garlic. Set aside.
  2. In a small bowl, whisk together the olive oil, vinegar, honey, salt and pepper.
  3. Pour over vegetables and toss gently. Cover and chill for 1-2 hours or until ready to serve.
  4. Toss again lightly before serving to freshen.
