  • 1 cucumber sliced and then cut in to halves
  • 4 tomato cut in to eighths
  • 1 red onion peeled and thinly sliced
  • 1 tablespoon olive oil
  • 0.5 lemon (juice only)
  • 2 tablespoon mint sauce
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 10 mint finely chopped, fresh

Instructions

  1. Put 1 Cucumber, 4 Tomatoes and 1 Red onion into a bowl.
  2. Add 1 tablespoon Olive oil, juice of 0.5 Lemon, 2 tablespoon Mint sauce and 10 Fresh mint.
  3. Add 1 pinch Sea salt and ground black pepper and mix well.

Notes

  • The salad can be made a few hours in advance and refrigerated to deepen the flavors without making the tomatoes too soft.
  • Adding olives gives a salty, savory dimension to the salad.
  • For a heartier option, top the salad with grilled chicken breast slices.
