Description
The Cucumber Tomato Tahini Salad combines cool diced English cucumber, sweet tomatoes, and chopped jalapeno for a fresh but slightly spicy salad. The key ingredient is a lime tahini dressing made by blending tahini paste with lime juice, water, kosher salt, and parsley, creating a creamy and zesty sauce that coats the vegetables evenly. Optional Aleppo pepper adds a mild smoky heat, contributing another layer of flavor complexity to the salad.

For the salad
- 1/2 English cucumber seeded and diced into small cubes, large
- 1 to 2 tomato vine-ripe, diced into small cubes
- 1 jalapeno pepper chopped, remove the seeds for less spicy, small
- 1/2 tsp Aleppo pepper (optional)
- kosher salt (to taste)

Instructions
- For the dressing, make my lime tahini sauce recipe by blending tahini paste, lime juice, water, kosher salt together, then stir in a good cup of parsley. You can do this one night ahead of time and save it covered in the fridge. (If the tahini sauce becomes thicker as it sits in the fridge, you can stir in more lime juice or water to loosen it).
- To make the salad, in a medium mixing bowl, combine the tahini sauce with the diced cucumbers, tomatoes, and jalapeno. Add the Aleppo-style pepper, if using. Mix well. Taste and add salt to your liking. And if needed, add more lime juice.
Notes
- Store leftover salad covered in the fridge for up to four days to maintain freshness.
- Prepare the lime tahini sauce at least a day ahead for deeper flavor integration.
- If the tahini sauce thickens after refrigeration, stir in additional lime juice or water to reach desired consistency.
- Removing jalapeno seeds reduces the spiciness for a milder salad.
