Cumin Lime Roasted Sweet Potatoes

These cumin lime roasted sweet potatoes feature sweet potato sticks tossed with olive oil, cumin, salt, and fresh cilantro before roasting until browned and tender. A squeeze of lime juice and a sprinkle of fresh cilantro brighten the warm, earthy flavors. The roasting process creates caramelized edges and a soft interior.

Description

The sweet potatoes are peeled and cut into half-inch sticks, which ensures even cooking and a combination of tender and crispy textures once roasted. After tossing with olive oil, ground cumin, salt, and most of the chopped cilantro, the potatoes are spread on a baking sheet to roast at 425ºF. Midway through cooking, they are stirred to promote even browning and prevent burning.

Once roasted to a golden color with browned edges, the potatoes are finished with the remaining fresh cilantro and a fresh lime juice squeeze, adding a burst of acidity that contrasts with the natural sweetness and earthy cumin flavor. This side dish offers a vibrant alternative to traditional roasted potatoes.

Ingredients

Servings
  • 1.5 lbs sweet potato $1.99
  • 2 Tbsp olive oil $0.32
  • 1 tsp cumin $0.10
  • 1/4 tsp salt $0.02
  • 1/4 cilantro $0.25, bunch fresh
  • 1 lime $0.33, fresh

Instructions

  1. Preheat the oven to 425ºF. Peel and slice the sweet potatoes into 1/2 inch wide sticks. Place the sweet potatoes on a large baking sheet and drizzle with olive oil. Sprinkle the cumin and salt over top.
  2. Pull the cilantro leaves from the stems and roughly chop. Add about 3/4 of the cilantro to the baking sheet with the sweet potatoes, reserving some to add fresh after baking. Toss the sweet potatoes until they are evenly coated in oil, cumin, salt, and cilantro.
  3. Roast the sweet potatoes in the oven for 20 minutes, stir, and return to the oven. Roast for about 15 minutes more, or until the sweet potatoes are blistered and browned on the edges.
  4. After roasting, add the remaining cilantro and squeeze fresh lime juice over top. Serve warm.
