Cumin-Roasted Carrots

These cumin-roasted carrots are seasoned with toasted coriander and cumin seeds, which lend a warm, aromatic spice to the naturally sweet and tender carrots. Baking them with coconut oil helps develop a crispy, caramelized exterior while keeping the insides soft. The dish is garnished with fresh cilantro, adding a bright herbal note that complements the earthy spices.

Description

Cumin-Roasted Carrots feature sliced carrots tossed with melted coconut oil, fresh garlic, and crushed toasted coriander and cumin seeds. The toasted spices release their oils during preparation, enhancing the flavor of the carrots. Roasting at 400°F allows the carrots to brown delicately, creating a balance between crisp edges and a tender center. Salt and black pepper season the vegetables, while cilantro added at the end brightens the dish.

This side can be served warm alongside a variety of mains, providing a spiced vegetable option that's more distinctive than plain roasted carrots. The toasted seeds add complexity without overpowering the carrot's natural sweetness.

Ingredients

Servings
  • 2 teaspoons coriander seeds
  • 2 teaspoons cumin seeds
  • 16 carrot 1 3/4 pounds, or about 6 cups) peeled and sliced into 1/2-inch-thick pieces, small
  • 1 tablespoon coconut oil melted
  • 1 1/2 tablespoon garlic diced
  • salt to taste
  • black pepper to taste
  • cilantro to garnish

Instructions

  1. Preheat your oven to 400°F.
  2. Heat a small pan to medium-high heat (do not spray with cooking spray or oil). Add the coriander and cumin seeds, and toast, stirring constantly, until lightly golden and aromatic, about 1 minute. Keep an eye on them, as they burn quickly!
  3. Crush the toasted seeds and set aside.
  4. In a large bowl, combine the carrots, melted coconut oil, and garlic. Stir in the crushed seeds, and mix well until the carrots are evenly coated in oil.
  5. Transfer the carrots to a large baking pan, so that they are in one layer, with some space between them if possible. Sprinkle with salt and pepper.
  6. Bake until golden brown and crispy, about 30-40 minutes, stirring halfway through the baking time.
  7. Garnish with cilantro and serve warm.
